Punch Français au cafè


INGREDIENTS FOR 2/3 PERSONS:    2 dl strong coffee - 2 tablespoons sugar - 1 tablespoon peeled and ground hazelnuts - 2 slices orange rind - 2 tablespoons whipped cream - 1 small glass of white rum - for the syrup: 3 tablespoons brown sugar - 1 tablespoon water

PREPARATION:  1. To prepare the syrup boil brown sugar and water for some minutes: the syrup must not brown.

2. Add the orange rind slices and the rum.

3. Make the coffee and sweeten it, add the ground hazelnuts, blend half of the syrup in the rum.

4. Pour the punch in warmed glasses, add the remaining syrup and decorate with whipped cream. Serve right away.

LITTLE SECRETS:  For an exclusive touch moisten the glasses’edge with rum and dip lightly into sugar mixed with coffee powder.
